Honey, Lime, & Chilli Shrimp


20 medium sized shrimp, peeled and deveined 
3 tablespoons olive oil 
3 tablespoons honey 
1 tablespoon crushed red pepper flakes 
1 lime, cut in half and juiced 


Combine the olive oil, honey, red pepper flakes and lime juice into a small bowl. Mix well with a spoon. If grilling, thread the shrimp onto wooden skewers. 

Transfer the mixture into a glass baking dish and add the shrimp. Let the shrimp rest in the marinade for at least 15 minutes. To finish, grill the shrimp for 2-3 minutes per side. Alternatively, you can bake the shrimp in a 400 degree oven for 10-15 minutes. Serve immediately with your choice of fresh fruit.
